Get the latest, probably with the Mate or Cinnamon DE. There is another way to avoid those alpha-quality choices - Linux Mint. In 20.04 and 22.04, Canonical has inflicted a few of their wishes onto us that just aren't ready for use. Since 16.04, there are many, many, many, changes. 22.04 has so many changes and many can break your current workflows. Nearly all the big bugs have workarounds by now. say in the fall, then I'd go with 20.04 versions. If you need a very stable system and can commit to upgrading to 22.04 THIS YEAR. Those same DEs running on 22.04 are supported until April 2025.
Beware that LXQt, XFCE and Mate DEs running on 20.04 have support until April 2023.
